Baking Day with Oatmeal

I have an abundance of oatmeal in the house and thought I would put some of it to good use today. I made a double batch of chocolate oatmeal no-bake cookies and a double batch of cinnamon-raisin granola.

The boys have already been in the kitchen trying to rob a cookie but they are still cooling. I am sure they will make a good dessert after supper.

As soon as the granola is done cooling I will put it in an airtight cereal container. My favorite way to eat granola is on top of a yogurt parfait. This is an easy breakfast or a healthy dessert. Either way it is versitile and easy. The granola also makes a great cereal or trail mix ingredient. My 12 year old hopeful chef in the making likes to mix granola into his grandmothers ice cream recipe. I am sure you can come up with several other ways to eat granola as well. Enjoy!
