Menu Plan Monday ~ Living out of the Pantry



I did a bit of sale shopping this weekend and now I am determined to live 100% out of the pantry this week.  Sometimes it is just nice to work with what you have in the house and not be burdened with going to the store.  Due to a great sale we have several gallons of milk in the freezer and bread is of no worries.  If I run out I can make some from scratch.  Tonight we finally have no plans and I intend to make a nice family dinner where we can all sit down and discuss our days.  Often I think we get busy trying to do it all and fall short on loving our families.  Tonight we are just going to celebrate being together and I might even toss in a dessert!

I also had bread and milk on hand and wanted to serve up a yummy meal in less than 20-minutes; so I made my Sausage & Cheddar Cheese Breakfast Bake along with Hot Spiced Peaches dessert for Rebecca Regneir (and her camera man, Todd) of Channel 13-abc news when they came over to interview me this morning about my new Busy People's Fast & Frugal Cookbook, due out Oct. 13. They could not beleive it was low-fat and all done in 20 minutes! The peaches, sweetened with Red Hot candies was my favorite part of the meal. I love desserts! Here are the two recipes both with thier own grocery list and supplies list: Enjoy! (I think I may have to make more Hot Spiced Peaches again tonight, they're toooo good! :) Enjoy! Smoked Sausage and
Cheddar Egg Bake 20 minutes

Warm, thick chunks of French bread smothered with melted cheddar cheese and smoked sausage deliver a gratifying meal.

Ingredients

7 eggs

1/3 cup fat-free skim milk

1 tablespoon dried chives

1 (8-ounce) package fat-free shredded cheddar cheese, divided

1 (14-ounce) package Healthy Ones skinless smoked sausage

1 (16-ounce) loaf of French bread (use only half)

Instructions for entrée:

In a large mixing bowl, whisk together 3 whole eggs, 4 egg whites, milk, dried chives, and 11/2 cups cheese until well blended. Set aside. Reserve the remaining 1/2 cup cheese to use later.

Cut the sausage into thin, bite-sized pieces and add to the egg mix.

Cut half of a 16-ounce loaf of French bread into 1-inch-thick chunks. Add to the egg mixture. Save the other half of the loaf for another recipe.

Using your hands mix all the ingredients together until the bread is saturated with the egg and cheese mixture.

Generously spray a 2-quart glass microwavable casserole dish with nonstick cooking spray.

Pour the egg and bread mixture into the casserole dish. Sprinkle the reserved 1/2 cup cheese on top.

Spray the top of the casserole with nonstick cooking spray.

Cover with wax paper and cook in the microwave for 6 minutes or until the egg is no longer wet looking.



Yield: 6 (1-cup) servings Calories per serving: 300 (15% fat); Total fat: 5 g; Cholesterol: 136 mg; Carbohydrate: 32 g; Dietary Fiber: 1 g; Protein: 30 g;

Sodium: 1142 mg Diabetic Exchanges: 2 starch, 31/2 very lean meat

1 (14-ounce) package Healthy Ones skinless low-fat smoked sausage

Fat-free skim milk (1/3 cup needed)

1 (8-ounce) package fat-free shredded cheddar cheese (divided)







PACKAGED

1 (16-ounce) loaf of French bread (only half used)



PANTRY

Dried chives

Non-stick cooking spray

Hot Spiced Peaches-10 minutes

The flavor of thess Hot Spiced Peaches is every bit as wonderful as the vibrant color. This wonderfully warm dessert is perfect for any chilly day.





Ingredients

1(29-ounce) can no sugar added yellow cling sliced peaches

1/3 cup cinnamon flavored candies (Red Hots)

1 tablespoon cornstarch

½ tablespoon water



Instructions

· In a 2 ½ quart sauce pan stir in 1 (29-ounce)can no sugar added yellow cling sliced peaches and 1/3 cup cinnamon flavored candies. Cook on high heat bringing to boil. Stirring occasionally.

· After ten minutes of boiling in a separate small bowl make a paste of 1 tablespoon cornstarch and ½ tablespoon water. Stir into boiling peaches.

· Remove from heat and let sit for three minutes.

· Serve.



Yield: 6 (½ cup) servings



Grocery List for: Hot Spiced Peaches

1 (29-ounce) can lite peaches

Cinnamon red hot candies (1/3 cup needed)

Cornstarch (1 tablespoon needed)

I wish I had room for a freezer in our apartment. There were so many great grocery savings this week.
Looks like your family is going to have some terrific meals this week.
I love MPM especially since my husband and I lost our jobs. I'm looking for inexpensive and healthy meals for our family of three.
Well, gotta get back to the laundry and "Law and Order".
